Vegan Caesar Salad
This is a new trending way to make Caesar Salad better! Add Kale for another shade of green and transforming dressing to be vegan version w/seaweed addition…YUM
Definitely considered a Whole Meal in itself.
Step 1
Toss Romaine, Kale & Dulse, set aside while
blending together dressing:
Olive oil, Hemp oil, Lemon, Capers, Garlic, Salt.
Sing, Dance, Love what you are doing!!
Ingredients
2-3c Romaine lettuce, sliced into thin ribbons
1-2c Kale of choice(I chose Dino here), also sliced into thin ribbons
1c Dulse, chopped or torn
1-2 Avocado’s, sliced on top
Parmasan, optional
*Vegan option:use ground up pumpkin seeds or nutritional yeastDressing:
1/4c each Olive oil & Hemp oil
1/4c Lemon juice
1T Capers
1t grated Garlic
Himalayan or Celtic Salt to taste
Step 2
After blending Dressing, pour over salad greens and toss again. Grind pine nuts or pepitas(pumpkin seeds) into a fine crumble. Shake over top and toss some more. If time allows, cover and refrigerate for atleast 30 minutes before serving.
Step 3
If eating w/soup, serve with some hearty fresh Sourdough, maybe from your local organic bakery! Don’t forget to use more olive oil here for dipping. Grass fed Organic Butter or Ghee is delicious too!
Nice paired with a glass of Red Wine.
