Red Lentil Curry
During Quarantine,my daughter’s kept asking for this soup, even on days when it was in the 80’s! Ok, so it’s very simple to make, heartily delicious, and easy to digest..
Step 1
Start broth heating in large 2Q pot, add in rinsed lentils. Bring to boil, then turn to simmer, adding in potatoes and curry. Sauté onion and garlic in a little oil(safflower, sunflower, or coconut). Add to pot w/tomatoes, cover and simmer at least 20 minutes more.
Ingredients
1.5c Red Lentils
6c Stock(veg or bone broth)
2 Sweet Potatoes, large(diced)
3T Red curry paste or 1T Curry powder
Expeller pressed oil of choice
1 Onion, yellow(diced)
3 Garlic cloves(minced or chopped)
2c Tomatoes, fresh or canned(diced)
Garnish: Cilantro, ghee, yogurt, & or ginger slices
Step 2
Let cool for 10 minutes, ladle into your favorite bowl. Dress up by topping w/chopped cilantro and a dollop of
ghee or plain yogurt.
