Health Nutty Burger

These can be tricky to make, but this one worked out!!

When I was young(er), back in the late 80’s-90’s, I used to Love this place called the Sunflower Drive-in. They made the best “nut burger’s” ever eaten to this day. They may even still remain..since I have made many of my own from scratch. This one is great and well worth the 30 minute prep time! **This recipe makes up to 20 patties(cut it or freeze rest)

 

Step 1 & 2

Saute onions, carrots, and mushrooms in oil for abut 3-5 minutes.
I love using cast iron skillet.

Bring stock to boil, add in sauteed veggies and other ingredients,
oats last(adding in slowly as they soak in).

Ingredients

  • Safflower or sunflower oil, 2T

  • Onion, diced, 1.5c

  • Mushrooms(maitake & shitake), diced, 3/4# fresh

  • Carrots, diced, .5c

  • Water or stock(broth of choice), 4c

  • Tamari, 1/4c

  • Nutritional yeast, 1/3c

  • Garlic, 2 cloves minced

  • Oregano, dry, 1t(fresh, 1T) Thyme, same

  • Marjoram, 1/2t

  • Rolled Oats, 5c

Step 3

Cook for 5 minutes until mixture is thick at the bottom of the pot. Cover & let sit for 15 more as it continues to thicken. Cool and shape into patties. Place on oiled baking sheet. Bake at 350 for 40-45 minutes, turning half way through. Serve hot in buns or cold in sandwiches with favorite toppings(:
