Jackfruit Tacos
Jack Fruit Taco’s?? Yes, yet another yummyliciously unusual vegan creation has hit the foodie scene(: Try them, I dare you. I was even skeptical the first time, I tell you they rock!!!
Step 1
Using a cast iron skillet over medium flame, saute onion and spices in oil for a few minutes. Add in tom paste and jack fruit(strained). Continue to sauté for 5-10 more minutes, breaking up jackfruit chunks with fork or spatula, Mix all together well(:
Ingredients
Jackfruit(Native Forest)
sorry, but it is in a can-2cTomato paste, 3T
Onion, 1/2c chopped
Chili powder, 1t
Cumin, 1/2t
Garlic, 1/4t or to taste
Sunflower oil, for saute
Step 2
Gently heat you favorite tortilla to be flexible. My choice would be Rudi’s Spelt or Food for Life Sprouted Corn. Fill w/desired amount and top with awesome veggie like shredded lettuce, cabbage, carrots, radish, and sprouts. Then slice some avocado on with a lil shredded raw cheese and a dollop of creme or yogurt. Wallah!!

This fruit is semi-fruity tasting, really has a “meaty texture” though making it great as a substitute for them traditional western recipes.
