Step 1~
Roast(400 degrees) or grill sliced eggplant until tender(not mushy) about 25 minutes. Remove skins and cut into 1” cubes. Place into food processor or blender w/ all other ingredients.
Blend until smooth(:
Ingredients
2 small or 1 large Eggplant
1/3c Tahini, raw
1/3c Limon, freshly squeezed
dash of Cumin
dash Cayenne
1-2 Garlic cloves, minced
1/3t Himalayan salt or to taste
Step 2~
Garnish w/chopped Parsley-lots, Olive Oil & Paprika!
May also add in your Love & Song, never hurts…

Final Notes:
Injoy this w/Naan or another version can simply
be a thick flour tortilla(I like Rudi’s Spelt). Eat
w/chopped Tomato & Cucumber…
