Yes! Try this yummy recipe:)

Arugula~Tomato Salad

This salad is a different version from the original Beet salad, which is better in the cooler months. Use tomatoes when they are in season, in summer! Both the Arugula and the Cherry toms here are from our family garden!

Step 1

Pick your fresh Arugula leaves & Tomatoes, rinse, drain, put in favorite bowl. Cut tomatoes desired size.

Chop or slice either Almonds or Hazelnuts. Add to bowl.

Thinly slice favorite goat cheese or crumble in some chèvre or not(:

Ingredients

  • Arugula, approx 4 cups

  • Tomatoes, approx 1c

  • Almonds, 1/4c

  • Goat cheese, like chèvre or Midnight Moon

    Dressing:

  • Olive oil, cold pressed, raw
    -Drizzed over top

  • Lemon juice, approx 1T squeezed

  • Himalayan or Celtic Salt, to taste

Step 2

Toss dressing in with favorite serving utensils, no need to mix separately, Super Simple!!

Final Notes…

Arugula is bitter for sure, but remember Bitter is Better for
your Health as bitter greens and herbs stimulate Bile juices in
Gall Bladder to assist Liver in Detoxification processes.
